Saturday: Roast chicken, brown rice and gravy, roasted butternut squash, salad
Sunday: Pesto pasta with shrimp
How do you roast your cauliflower? Does it come out soft or crisp ... or crisp with a soft center? :)
ReplyDeleteJennifer - roasted cauliflower is my favorite "new food" of the last year or so. I am not a huge cauliflower fan, but love it roasted. Mix with OO and course sea salt, spread out on tray (don't overcrowd!). roast at 400 or higher (I think I have gone as high as 425). 12 minutes, stir/flip. 12-15 minutes more. Make sure it is really browned before you take it out. Crisp on the outside, soft center. Yum!! :)
