I am a little behind in my posts because of my quick trip out to Lemoore . . . but I am very glad to have this blog back for ideas for the coming week. :) Here is what we did last week. (Liam chose nights Thursday through Saturday when I was gone!) Now I have until tomorrow's trip to the store to plan the coming week . . . I think I will just pick one or two things from each of the last posts . . . :)
Wed: Beef brisket in the crock pot, homemade buns (I'll have to share my newly found recipe for homemade hamburger and hotdog buns. It is so easy, and so much better than the bagged versions, that I may never go back!) :) carrot and apple slaw, sauteed chard
Thurs: Tortillini soup, Irish brown bread
Fri: Lasagna, leftover bread
Sat: Hamburgers, garden veggies
Sun: leftovers or breakfast for dinner
Mon: grilled fish, homemade mac and cheese, beans, caprese salad

Homemade Hamburger Buns
Using a stand mixer with a bread hook attachment makes this even simpler, but you can easily follow these same directions using a wooden spoon to combine everything and then knead the dough by hand.
4 teaspoons active dry yeast
1 cup plus 2 tablespoons warm water (110° to 115°)
1/3 cup vegetable oil
1/4 cup sugar
1 egg
1 teaspoon salt
3-1/2 – 4 cups all-purpose flour (I substitute at least 1 cup of whole wheat flour, sometimes more . . . if I have white whole wheat flour I just use 100% of that . . . )

In the bowl of a stand mixer, dissolve yeast in warm water. Add oil
and sugar; let sit for 5 minutes. Add the egg, salt and 3 1/2 cups
flour, and mix on low speed with the dough hook attachment to form
a soft dough.Continue kneading in the mixer on medium-low speed until
smooth and elastic, about 3-5 minutes. Divide into 10 pieces; shape
each into
a ball. (To make hot dog rolls, roll each ball of dough between your
palms until you get it to the desired length.) Place 3 in. apart on
greased baking sheets, and using the palm of your hand, flatten each
ball into a flattened disk.Cover and let rest for 20-25 minutes. Bake at
425° for 8-12 minutes
or until golden brown. Remove from pans and let cool on a wire rack.

ReplyDeleteSince we are leaving for Tahoe tonight-- I had no meal plan but to finish everything in the fridge so it has been leftovers, leftovers ... and takeout. It was 96 in the house yesterday evening so we ordered Thai food and laughed at Monica sucked up some noodles and sounded like Maggie from the Simpsons when she'd suck on the pacifier. Did I just date myself?
Moving on-- Mark's professional organization sponsored an event on Sunday at Williams and Sonoma that discussed tips for the physician early in career to balance and manage priorities -- family, finance ... and food. Mark brought home several suggestions from a nutritionist about healthier substitutions and a book called Easy Meals by Ellie Krieger of the Food Network. I'll peruse, trial and let you know.
Everything looks delicious. Stay cool and sane with all the activity. I only have one and coordinating day care drop off and pick ups with morning meetings is already making me nuts. I can only imagine with 4. Can I count getting Mark ready in that mix?

Your bun recipe sounds awesome, Kathy. We have also left behind store bought buns, but I totally cop-out with using the bread machine. Would like to know how to do it the "old-fashioned" way though and will have to give this a shot sometime.
