Hello ladies!
After a glorious week relaxing and enjoying all the extra help with the kids (and home decorating!), it's back to reality. Back to deciding what to feed my crew and perhaps braving shopping with all 3 kids in tow now that preschool is over. I am planning on having them help me stock our sad, empty fridge tomorrow. After that, I'll let you know if I'm back to my Friday 9 p.m. shopping nights.
Kathy - I did eat that yummy sample of 'Fiesta Quinoa ala Kathy' last night and DELICIOUS!! I think I can figure out the proportion, but what was the magic sauce you poured over it?
Tonight (kids are napping, Jim's working, and I'm unpacking everyone)... chicken stir fry of sort with brown rice, salad, and whatever we can find in the pantry/freezer.
Wed Beer Can Chicken, grilled veggies, salad, homemade corn muffins, Cajun steak fries.
Thurs Lamb Kabobs with mint sauce, Kathy Quinoa Salad, grilled veggie kabobs, flat bread with feta and basil.
Fri Spicy Thai chicken stew and rice, steamed broccoli, garden salad
Sat Baked ziti, sauteed spinach and kale, garlic rolls, and fruit salad.

This is why I love you, Betty. In the Booher house, "Kathy Quinoa Salad" is DINNER (maybe with some shrimp if I have them in the freezer). In your house, you have it with lamb kabobs, mint sauce, veggie kabobs, and flat bread with feta and basil. WOW!!! :) And as for the "sauce" aka dressing, it took me hours and hours. Mix 1/4 cup fresh-squeezed lime juice, 3 TBSP olive oil, 1 tsp sugar, 1/2 tsp salt. Easy peasy. For the rest of you, this is a fabulous recipe. It is my "go-to" whenever I have to bring a side to a party/BBQ/etc. Usually I make it with small pasta shapes (small shells work the best), but I made it with quinoa for Memorial Day because Betty and Aunt Anne are no-wheat folks. Personally, I think the pasta version is a wee bit better, but the quinoa was good! (Also, Betty, the "sauce" is much better with FRESH lime juice. I didn't have limes and used Mom's canned juice. I could tell the difference!) For the salad, just mix the pasta/quinoa with black beans, tomatoes, corn, peas, scallions, shredded cheddar, avocado, and cilantro. Easy and good. (Frozen peas and corn . . . don't even cook them, just throw them in frozen and hour or so before you eat and let them thaw.) Enjoy!! :)

The kids and Jim gobbled it all up and I thought I made enough with leftovers for lunch. Thank you thank you! This ones a keeper.
